The middle of the week...

It's been a busy couple of days here. Work has been kinda nuts, which has kept me on my toes during the day, and Lukas hasn't been feeling well, which has made evenings a little stressful.

In spite of it all, we've been enjoying good food here. I need to get on to other things tonight as it is getting late, so I'll just put up menus for the last two days.

Wednesday:
Breakfast:
Egg casserole
1 peach

Lunch:
Zucchini and ground beef
1 apple
Steamed broccoli

Dinner:
Chicken in the crockpot with green beans and carrots
Green salad with homemade mayo

Thursday:
Breakfast:
Egg casserole
1 peach

Lunch:
Ham steak with pineapple chunks
Cabbage salad with homemade mayo
Green beans and carrots from Wednesday's dinner
1 apple

Dinner:
Green salad with homemade mayo
A tomato from our deck garden (very tasty!)
Pork roast with green beans

Tomorrow I'm working 5 hours of overtime again, so I might not have time to post an update. If not, I'll try to have one up at least by Saturday.

Food, food, and more food!

Hey gang!

I took an unintended break from posting the last couple of days. It was a busy weekend with me working, and I was trying to get other things done yesterday on my day off. Hopefully I can continue to be fairly consistent with sharing what's going on, though, as I know there are several people reading and (hopefully) being inspired by what I post.

After dinner tonight we went for a walk through our neighborhood. According to MapMyRun.com, it was a total 2.67 miles. Not a bad little hike! We live in an older neighborhood, and it's kinda sad to see how few people get out to do anything around us. We saw a handful of people doing things in their yards or sitting on their decks, but that was pretty much it.

Okay, I have to catch you up on three days' worth of food. So, here we go.

Sunday:
Breakfast:
Egg casserole
Monkey salad with strawberries

Lunch:
Potluck at church, non-compliant with Whole30, but once in a while isn't a terrible thing

Dinner:
Zucchini and ground beef
Cabbage salad with homemade mayo
1 apple

Monday:
Breakfast/Lunch:
Monkey salad with strawberries
Egg casserole

Dinner:
Balsamic infused pot roast (with a pork roast from my in-laws)

Green salad with ranch dressing (dressing was not Whole30 compliant, but we were pretty much out of homemade mayo)
Fresh green beans

Tuesday:
Breakfast:
Scrambled eggs
Cantaloupe

Lunch:
2 hamburger patties with Dijon mustard
Cabbage salad with homemade mayo
1 apple
Steamed broccoli

Dinner:
Zucchini and ground beef
Raw cucumber, broccoli, green pepper, and grape tomatoes

Another day of great eating!

Hello friends! It's Saturday, and you all know what that means. Food!

I'm doing remarkably well today considering how off my schedule is. I managed to sleep in until 10 this morning after waking at 7 to close the windows during a storm and again at 9 because my body knew it was long past time for me to normally be up. With Abi and Lukas at her parents' house, I spent a little time cleaning and doing laundry, and it felt great to get those things out of the way. I would have liked to have gotten more done, but I wasn't really structuring my time.

Almost everything I ate today was already prepared, which made meals a lot easier.

Breakfast:
Egg casserole
Monkey salad
1 peach

Lunch:
2 hamburger patties with Dijon mustard
Green salad with homemade mayo

Dinner:
Zucchini and ground beef
Cabbage salad with chili-infused olive oil and homemade mayo
1 apple

Work started off a little busier than last night, but has quieted down a good deal, and I'm hoping it will stay that way. With the writing progress I made last night, I'm excited to see how much more I can accomplish.

Another day of food!

So, are you sick of hearing about food yet? I hope not, because I still enjoy posting about it. Though, as I've mentioned, I need to incorporate exercise into my routine, and that will also make it into my posts once I've implemented it. I'm looking forward to a new week starting Monday with the opportunities available.

Because I worked until 8:30 PM last night and then stayed up until almost 11 watching a movie with Abi, I slept in this morning. I think that is probably the main reason I am still functioning at 10:15 PM. I've definitely adapted to being on the day shift schedule, and I know that by Sunday night I'm going to be running low on energy. My biggest concern is getting so run down that I get sick, so I'm going to be sure to get plenty of rest, drink lots of water, and eat good food.

Work has been steady tonight, but not busy, which is a combination that I like. I've been taking advantage of the time to do a little writing for the July Camp NaNoWriMo. My goal is to have a 50,000 word book by the end of the month, and I'm falling a little behind schedule, even though I started the month with a little over 9,000 words already written. I'm hoping to make up my deficits during the week by hitting it hard on Saturdays, and we'll see what happens. Of course, 50,000 words would be about double the length of any individual book from The Truth Chronicles, so it will definitely be a challenge to reach that length.

Breakfast:
Egg casserole with green onion sausage from my in-laws, diced red onion, diced green pepper, and pulsed broccoli
Monkey salad with strawberries

Lunch:
A portion of smoked ham pork steak from my in-laws
A couple pieces of chunk pineapple
(I was in a rush because of a late start in preparing my food, so that's all I had O_o)

Dinner:
A few pistachios
2 hamburger patties using grass-fed beef from my in-laws and topped with a little Dijon mustard
Cabbage salad with chili-infused olive oil and homemade mayo
1 apple
1 Peanut Butter Cookie Larabar (that I didn't realize contained peanut until I was eating it :P)

Tomorrow I should be a little bit more on my game for food, especially since there are plenty of leftovers in the fridge. The biggest trick for me will be making sure I get enough veggies. We are running low on those, but I think we'll wait until Monday to pick more up.

Beyond Whole30...

Hi there, everyone! I have the privilege of writing to you as I have some downtime at work. It's been a long day, and I still have about 45 minutes to go. Hopefully I can get my coworkers off to lunch before I leave so they don't have to scramble while I'm gone.

I heard some interesting news this week. A lawmaker here in Iowa is going to resurrect a bill that failed to pass in 2013 to remove the current ban on fireworks. I'm curious to see what happens as apparently there was enough positive feedback last year that indicates such a proposal has a shot at passing.

Work hasn't been nearly as stressful today as it could have been, though the lab was a lot busier than I anticipated. All of the doctors must have been getting everyone in that they could so they could take a long weekend.

Thankfully, for me, we have a medium-sized cooler that allowed me to easily bring two meals worth of food. Bet you're wondering just what I had to eat now, aren't you? ;)

Scrambled eggs with green pepper, red onion, and seasoned ground beef
Monkey salad

Lunch:
Zucchini and ground beef
Cabbage salad with chili-infused olive oil
Steamed broccoli
1 apple

Dinner:
Leftover ribs from last night
Green salad with no dressing :(

1 apple

I also broke down and bought a small bag of pistachios at work to get me through the mid-afternoon. They were quite tasty, but I'll have to be careful to avoid that sort of spending.

Moving beyond the initial Whole30

It's been a good day for me, somewhat stressful for Abi with an emotional toddler. Hopefully we will all sleep well tonight as we all need it. Tomorrow I will be at work for 13 1/2 hours to help cover a shortage on the evening shift. The extra money from the overtime will be nice; being extra tired just before a three-day weekend of working evening shift won't be so great. I did it to myself, though, and I trust that God will see me through it.

I had my piece of cake this afternoon, and it really didn't taste nearly as good as I thought it might, which means my system probably reset more than I had realized during the past month. That's good news. I'm also much more tired than I normally would be at this time of night, and I can only attribute that to a likely sugar crash. Still, the desire to eat something sweet is there, so I know I have more ground to cover. I don't know if the cravings will ever completely disappear, but at the very least I want to get them firmly under control.

With that in mind, I am definitely going to stick with the plan of being Whole30 compliant for the next month or two. Abi doesn't think she'll have any trouble with dairy, grains, or legumes, so if she wants to incorporate them back into her diet, that will be her choice. I kinda miss cheese, but not as much as I would have thought, and milk has tasted off to me for the last 15 years, so I don't miss it in the least. I haven't really missed bread, either.

Our goal is still to incorporate more physical activity into our lives. I've been thinking about starting the C25K program again, and would plan on doing my workouts Tuesdays, Thursdays, and Saturdays. I should also be doing some strength training, but I don't know what form that will take at this time.

Quick update...

Just thought I'd share before I head out the door for work that I weighed myself this morning and came in at 225.8 pounds, which is almost exactly 14 pounds lighter than when I started the Whole30. I'll be posting more later about food for the day.

Whole30 Challenge Day 30

Woo-hoo! Last day of the experiment completed! And I have to say, I feel great as a result. My clothes fit better, I feel like I have more energy, and I've found food to be even more enjoyable as I've discovered how good it tastes on its own. However, as I've mentioned before, I really feel like I need to go through several more weeks of this stricter diet in order to eliminate more of my sugar cravings. Hopefully, with the passage of another couple of months, I'll have kicked those desires to the curb more or less permanently.
